Menu Plan Monday 4-28-08

I am working on incorporating more menus into my menu plan. I want my children to be excited about veganism and not give up on it due to a lack of variety, so I have been investing in more cookbooks. My most recent purchases are Seven Secrets Cookbook and Best Gourmet Recipes both by Neva and Jim Brackett. There are some fabulous recipes in both.

This week I plan to try the frittata and the potato patties for breakfast.

Here is what our menu plan for this week looks like:

Breakfast
Frittata, toast with peanut butter
Potato Patties, scrambled tofu, fruit
Pancakes, skillet potatoes, fruit
Waffles, skillet potatoes, fresh fruit
Cream of Wheat, toast with peanut butter, fresh fruit

Dinner (Served at 2pm)
Basil and Tomato Pasta
Pigs in a Blanket
Stir Fry with Asparagus
Mexican Mountains (Haystacks served over potatoes)

Supper (Served at 6pm)
Sandwiches and Salad
Soup and Bread
Fresh fruit and toast with peanut butter
Homemade pizza and Salad

  1. Ooooh! I never thought of doing haystacks on potatoes! Great idea!

    My next vegan cookbook purchase will be veganomico. My sister has it and made a pound cake that she says is delicious. If I can give up eggs and still have my beloved pound cake, I'm a very happy girl!
