Menu Plan

For November, Flylady's habit of the month is menu planning. This comes right on time, because menu planning is something that I struggle with and something that has been on my mind to get right. I'm not sure what it is that I so dislike about menu planning, because the benefits of having a plan of action ahead of time, going to the grocery store to make sure all items are on hand and then having a week free of "What's for dinner, Mommy"? sure do outweigh the bad.

So I have enjoyed my extra hour of sleep, my menu is ready to go and I am off to the grocery store to get this week started right!

Here's what we are having this week:

Breakfast

Hashbrowns, scrambled tofu, toast, fresh fruit

Crepes w/fruit, Boca sausage links, fresh fruit

Skillet Potatoes, grits, sausage, toast, fresh fruit

Pancakes, fresh fruit

Dinner

Creamy Stroganoff, mixed vegetables, garlic toast

Haystacks in a Taco Bowl, corn

Eggrolls, stir fried rice

Pizza, Soup

Calzones, Salad

Menu Plan Monday

Today, my daughter asked if we could try a quiche recipe from one of my cookbooks. I figured it would be a great time to try something new and get the kids involved in making the crust (they have a blast in the kitchen).

So here is our menu for this week:

Sunday: Sandwiches
Monday: Veggie Quiche
Tuesday: Tomato and Basil Pasta
Wednesday: Oatmeal Patties with Gravy
Thursday: Leftovers
Friday: Homemade Pizza
Sabbath : Dinner at a friend's house

Menu Plan Monday 4-28-08

I am working on incorporating more menus into my menu plan. I want my children to be excited about veganism and not give up on it due to a lack of variety, so I have been investing in more cookbooks. My most recent purchases are Seven Secrets Cookbook and Best Gourmet Recipes both by Neva and Jim Brackett. There are some fabulous recipes in both.

This week I plan to try the frittata and the potato patties for breakfast.

Here is what our menu plan for this week looks like:

Breakfast
Frittata, toast with peanut butter
Potato Patties, scrambled tofu, fruit
Pancakes, skillet potatoes, fruit
Waffles, skillet potatoes, fresh fruit
Cream of Wheat, toast with peanut butter, fresh fruit

Dinner (Served at 2pm)
Basil and Tomato Pasta
Pigs in a Blanket
Stir Fry with Asparagus
Mexican Mountains (Haystacks served over potatoes)

Supper (Served at 6pm)
Sandwiches and Salad
Soup and Bread
Fresh fruit and toast with peanut butter

Menu Plan Monday 2-4-08

Sunday- Mock Chicken Salad Sandwiches
Monday-Haystacks
Tuesday-Basil Pasta

Mock Chicken
7 Secrets Cookbook
Neva and Jim Brackett
2 cups soaked soybeans or garbanzos, drained (may use canned or do it yourself)
1/4 Braggs Liquid Aminos or 2 TB soy sauce
3 TB Chicken Like Seasoning
2 TB yeast flakes
1 TB onion powder
1/2 tsp garlic powder
2 cups vital wheat gluten
1. Place beans in blender with 1 1/2 cups water and blend.
2. While blending, add all the seasonings and continue until smooth.
3. Pour into a bowl and add the gluten flour. Work the flour in with your handsfor about minutes or until stiff. Add more gluten flour if it is still a little to soft.The less kneadingthe more spongy and breadlike. The more kneading makes it more chewy andelastic.
4. Form intotwo oval shaped loaves and place on a lightly oiled cookie sheet.Bake 50minutes at 350 degrees. Cool on a rack
For the chkn salad, cut the loaf and shred in a food processor. For my salad I add in Nayonaise and onions. I'm thinking of adding in some tofu for an egglike feel, but I haven't tried that yet. Let me know how you like it!

Menu Plan Monday (Breakfast)


This week I decided to post my breakfast menu. Breakfast is normally our largest meal of the day. We have dinner for lunch and then at dinner time we have something light such as a sandwich, fruit, popcorn or some combination of the like.
Sunday-Breakfast Burritos (Scrambled Tofu, Potato, and Boca Sausage Links wrapped in a tortilla)
Monday-Pancakes and fruit

Menu Plan Monday (Vegetarian)



Sunday-Haystacks (Chili, served over cornchips and topped with lettuce, tomatoes, onions, olives, salsa, etc.)

Monday- Basil Pasta, Salad, Garlic Bread

Tuesday-Tacos

Wednesday-Pigs in a Blanket (Hot dogs cut into quarters and wrapped in a cresent roll), Mixed Vegetables, Salad

Thursday-Spaghetti, Mixed Vegetables and Salad

Friday-Hot Dogs

Saturday-Black Beans and Rice, Cornbread, Salad

Our family is vegetarian, mostly vegan. My son is allergic to milk, and the more I learn about my body, it seems that I have some type of allergy as well. When I have food with milk in it, I can't breathe at night (asthma), so I'm working to eliminate it completely from our diet.
